At room temperature, it is a white to slightly yellow crystalline powder with a sulfur dioxide odor. Its density is approximately 1.48 g/cm³, and its melting point is 150°C (decomposes). In terms of solubility, sodium metabisulfite is soluble in water (resulting in an acidic aqueous solution), soluble in glycerol, and slightly soluble in ethanol. Industrially, sodium metabisulfite is mainly produced by absorbing sulfur dioxide into sodium carbonate or sodium hydroxide solution and then crystallizing it. Sodium metabisulfite is a strong reducing agent, releasing bisulfite ions (HSO₃⁻) in aqueous solution, exhibiting reducing and antioxidant properties.
